
Kellogg's® All-Bran Flakes®
Honey Muffins
Ingredients
1 cup (250 ml) flour
1 teaspoon (5 ml) baking powder
¼ (1 ml) teaspoon baking soda (bicarbonate of soda)
¼ (1 ml) teaspoon salt
1 cup (250 ml) Kellogg's
® All-Bran Flakes
®
1/3 cup (80 ml) buttermilk or sour milk (Maas)
1 egg
½ (125 ml) cup honey
¼ (60 ml) cup butter or margarine (soft tub)
Method
- Stir together flour, baking powder, baking soda and salt. Set aside.
- In a medium bowl, combine Kellogg's® All-Bran Flakes®
cereal and buttermilk (sour milk). Let it stand for about 2 minutes or until cereal
softens. Add egg, honey and butter/margarine. Beat well. Add flour mixture, stirring
only until combined.
- Portion evenly into nine 6 cm muffin tin coated with cooking spray.
- Bake at 200ºC for approximately 25 minutes or until golden brown. Serve warm.
Note:
Variation: To make sour milk, stir 1 tablespoon vinegar or lemon juice into 1 cup
milk. To substitute milk for buttermilk or sour milk, omit buttermilk or sour milk and
use 2/3 cup milk, ¼ cup honey, 2 ½ teaspoons baking powder and omit baking soda.
